Easy Egg Salad

Whether you enjoy it as a side or a sandwich filling, Easy Egg Salad is nutritious, delicious, and a perfect way to step up lunch!

Ingredients

Eggs6
Bell Pepper1
Onion1/2
Pepper1/4 tsp
Paprika1/2 tsp
Salt1/2 tsp
Mayonnaise1/4 cup
10 minute cook time on the stove top

Prep

Finely chop or dice the Onion and Bell Pepper. You will need a saucepan large enough to hold the eggs and deep enough to cover them in water as well as a mixing bowl.

Step One

Add eggs to saucepan and fill with water until the eggs are covered. Place on stove at medium high heat and bring to a low boil. Do not cover. Cook for ten minutes or desired time to achieve desired hard-boiled texture.

Step Two

Remove eggs from heat and carefully drain the boiling water. Run cold water over the eggs until they are cool enough to touch. Peel the eggs and rinse.

Step Three

Combine Bell Pepper, Onion, Pepper, Paprika, Salt, and Mayonnaise in a bowl. Chop eggs add to bowl. Add additional Mayonnaise if desired. Stir and then chill.

Jalapeno Peppers add the perfect heat if you like it spicy!
